I haven’t talked about this on this blog, but I’ve recently needed to go gluten free and dairy free for health reasons. After talking to my health practitioner, I realized that I have some mild allergies that might be aggravating some autoimmune disorders that have popped up over the last 5-6 years or so. I thought it would be fun to list some of the dinners that I’m eating. I’m trying to follow a Whole30 to start with. My allergies are to legumes, dairy, wheat, oats and a few other foods.
If you are on a gluten free diet – or are just curious about our menu plan, feel free to look this one over. I’ll try to update this every week.
Gluten Free Dinners:
Monday: Meatloaf, Green Beans, Steamed Brown Rice {Hint: Use shredded carrots, onions, chives and other veggies as a binder instead of bread crumbs/eggs}
Tuesday: Taco Night – Ground Beef or Roast Chicken, Lettuce, Onion, Cucumbers, Olives, Tomato, Shredded Cheese (optional) with or without the Corn Shells!
Wednesday: Baked Chicken and Steamed Carrots, Baked Potatoes
Thursday: Spaghetti Squash with Marinara and homemade Meatballs or ground beef added to sauce
Friday: Roasted Turkey Breast with Roasted Carrots and Potatoes
Saturday: Lettuce Wrapped Hamburgers with fresh Watermelon, Corn, Carrots & Celery Sticks
Sunday: Rotisserie Chicken, Mixed Raw veggies: Green Leaf Lettuce, Carrots, Cucumber
